Hope everyone is enjoying their Thursday! I’m sharing a recipe that everyone wants once they try one! They are the perfect sweet treat that you won’t feel guilty about eating. I love these little no bakes, and I always double the recipe because they are gone too quick if I don’t! They are friendly to our no refined sugar or gluten diet. The original recipe is a family recipe from my husband’s Grandma, she is diabetic so this is her alternative to all those super sugary desserts!
Recipe
- 1/2 C. Honey
- 1/4 C. Organic grass fed butter
- 1/2 C. Almond milk
- 1 1/2 C. Vegan carob chips
- 1 C. Nut butter of your choice
- 1 tsp. Vanilla
- 1/3 C. Sesame seeds
- 1/2 C. Pecans
- 1 C. Unsweetened coconut
- 2 C. Oats
Directions
Place honey, butter, and milk in a saucepan and bring to a boil. Take off burner and add carob chips, nut butter, and vanilla. Mix well, then add sesame seeds, pecans, coconut, and oats. Use a cookie scoop to mold balls of the batter onto wax paper. Once cookies are formed put in freezer/fridge to harden. We keep ours stored in a jar in the freezer and take one out whenever we need a little pick me up!
